1/4 cup flour
1/2 t. salt
1/4 t. pepper
6 1/2 inch pork chops
2 T. vegetable oil
1/4 cup butter
1 medium green pepper, finely chopped
1 medium onion, finely chopped, optional
1 stalk celery, chopped
1 can beef broth
1 can tomatoes
1 6 oz. can tomato paste
1 T. parsley
1 bay leaf

Directions:
Directions:
Combine first 4 ingredients. Dredge pork chops in flour with salt and pepper. Heat oil in large skillet over medium heat. Brown pork chops on both sides. Drain and place in a baking dish. Set aside. Melt butter in skillet. Add onions, green pepper, celery and sauté until tender. Add next six ingredients and simmer uncovered fur 20 minutes, stirring occasionally. Pour sauce over pork chops and cover with foil. Bake for one hour at 325 degrees or until tender.
