2 cups grated zucchini
2 eggs, beaten
1 cup seasoned bread crumbs
1 tbsp. margarine
1 tbsp. Old Bay
2 tbsp. grated onion
1 tsp. parsley
Flour and oil

Directions:
Directions:
Drain zucchini for 2 hours. Squeeze dry.
In a large bowl mix all ingredients except flour and oil.
Form into cakes.coat with flour, fry in oil until brown on both sides.

Mix cornmeal with flour for a better crust.
