12 Squares (1 oz. each) White Chocolate, divided
2 Sticks Butter (softened)
1 White Cake Mix
1 C. Milk
3 Eggs
1 1/2 tsp. Vanilla
6 oz. Cream Cheese
1 1/2 C. Powdered Sugar
1/4 C. Seedless Raspberry Jam
1 C. Fresh Raspberries

1. Preheat oven to 350º. Grease and flour 2, 9 inch, round cake pans. Microwave 6 squares white chocolate and 1 stick butter on medium-high (70%) for 1 1/2 min; stir. if necessary, microwave at additional 10 to 15 second intervals, stirring just until chocolate is melted. Cool slightly

2. Beat cake mix, milk, eggs, 3/4 tsp vanilla and white chocolate mixture in large bowl with electric mixer on low speed for 1 min. Beat on medium speed 2 minutes until well blended. Pour into prepared pans. Bake 25-30 min. or until firm. Cool 10 minutes; remove from pans, then cool completely on cooling rack.

3. For frosting, melt remaining 6 squares of white chocolate; cool slightly. Beat remaining stick of butter and cream cheese in medium bowl with electric mixer on medium speed until well blended. Beat in melted chocolate, remaining 3/4 tsp vanilla and a pinch of salt. Add powdered sugar; beat until frosting is light and fluffy.

4. Place 1 cake layer on serving plate. Spread jam evenly over cake; top with 1/3 frosting. Place second cake layer over frosted layer and cool in freezer to set. Frost top and sides of cake with remaining frosting. Garnish with fresh raspberries. Chill until time to serve. (I think the more raspberries you put on the better it is.)

I took this cake to our ward Christmas party dessert buffet one year. The next year they decided to have just this cake for dessert and asked me to make 8 of them! I got 3 friends to make some with me thankfully. So yeah, they look really pretty and taste great!
