1/2 cup chopped onion
1 tbsp. butter
2 lb. ground beef
1 cup catsup
1/2 cup water
1/2 cup chopped celery
2 tbsp. lemon juice
1 tbsp. brown sugar
2 tsp. worchestershire
1 1/2 tsp. salt
1 tsp. cider vinegar
1/4 tsp. dry mustard

In large pot, sauté the onion in butter, then add the ground beef, brown the beef and drain. Add remaining ingredients and simmer for 30 min.

At this point, you have delicious sloppy joes. If you want chili, to one half of the sloppy joe mixture, add two cans of kidney beans (I usually use one light and one dark), a can of mini diced tomatoes, and about three cups of either tomato juice or V8. (less juice if you prefer a thicker chili). Add two or three tbsp. chili powder, bring to boil, then reduce heat and simmer for forty minutes or so.

Only chili recipe I have ever used. I often freeze the sloppy joe mixture, then it's a snap to make up the chili if you need it in a hurry.
