16 oz. elbow macaroni
3 tbsp. butter
1 1/2 cups milk, divided
2 large eggs, lightly beaten
1 lb. cubed Velveeta cheese
8 oz. shredded mild cheddar cheese, divided
1 tsp. salt
1 tsp. ground black pepper

Directions:
Directions:
Cook macaroni in a large pot of salted boiling water until tender but not mushy. Drain well and pour into a large mixing bowl. Melt on low the Velveeta cheese and 1/4 cup of milk, stir often. Pour melted cheese over pasta and stir. Add in butter, 3/4 cups milk, eggs, 1 cup shredded cheese, salt and pepper. Mix well land transfer to a 2 quart baking dish and top with the remaining cheese. Bake at 375 until top crust is golden brown and casserole is bubbling, about 25 minutes.
