1½ lbs. boneless pork loin, cut into medallions
½ tsp. ground pepper
1 Tblsp. vegetable oil
⅓ cup orange juice
3 Tblsp. soy sauce
2 Tblsp. honey
1 Tblsp. dijon mustard
1 tsp. fresh ginger
2 cloves garlic crushed
Fresh sliced oranges optional
Watercress sprigs optional

Directions:
Directions:
Sprinkle each pork slice with pepper.
Heat oil in large skillet over medium heat.
Add pork slices; cook 3 minutes each side.
Pour sauce over and cook for 4 minutes each side in sauce, take out pork and keep
Reduce sauce, or thicken with cornstarch.
Serve with oranges and watercress and sauce.
Serve over rice.
