"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Beef
1 to 2 lbs Stew meat or round steak
Flour
Salt
Water

Noodles:
2 eggs
1 tsp salt
Water
1 1/2 cups flour

Directions:
Directions:
Cut beef into 1/2 inch pieces. Cover with flour and brown in oil in dutch oven pan and add salt to taste. Add water so all meat is completely covered and bring to boil. Turn heat to simmer and cook until meat is tender(around 3 to 4 hours). Add water to make plenty of broth

Break 2 eggs into medium bowl and add cold water from 1/2 an egg shell. Take a fork and beat together. Add 1 tsp salt and mix. Add about 1 cup flour and mix together Then add enough flour so can be handled, takes about 1 1/2 to 2 cups. Turn onto floured board and knead until a little, sticky but stiff, about 5 minutes. Roll out on floured counter top as thin as possible and sprinkle flour on top and cover with towel. In about hour or hour and half turn the noodles over and sprinkle this side with flour and cover again. In about an hour, roll noodles from one side to other and cut into strips. I then cut strips in half in middle of roll.

Add noodles to beef and broth on medium, stirring often so it won't stick on bottom. Cook until noodles are cooked, about 15 to 30 minutes.
