1 pkg active dry yeast
1/3 c warm water (110 degrees F)
2 c flour
2 T olive oil
1/4 tsp salt

Directions:
Directions:
In a small, bowl dissolve sugar and yeast in warm water. Let stand until creamy, about 10 minutes. In a large bowl, combine yeast mixture with flour; stir to combine. Stir in additional water, 1 tablespoon at a time, until all of the flour is absorbed. When dough has pulled together, turn out onto a lightly floured surface and knead for about 1 minute. Lightly oil a large bowl, place the dough in bowl and turn to coat. Cover with a damp cloth and let rise in a warm place until doubled in size, about 30 minutes.

Preheat oven to 475 degrees F Lightly grease a baking sheet.

Punch down the dough and turn out onto a lightly floured surface; knead briefly. Pat or roll the dough into pan. Dimple top of dough. Brush the dough with oil and sprinkle with salt; add herbs if desired.

Bake for 10-20 minutes, depending on desired crispness.
