1/2 cup water chestnuts, chopped
1/2 lb seedless grapes, cut in 1/2
1/2 cup chopped celery
2 cups cut up cooked chicken
1/4 cup (or more to taste) slivered almonds, toasted
3/4 cup mayo
1/2 teaspoon curry powder
1/2 teaspoon soy sauce
2 tablespoons lemon juice

Directions:

Combine everything but chicken and almonds. Mix thoroughly; add to chicken and toss to coat. Chill for several hours (gives flavors a chance to get to know each other).

Serve on a bed of lettuce and tomato, sprinkle with almonds.

10 minutes if you have chicken already,cooked (rotisserie chicken works fine) plus chill time.

Don't remember who Gail is and never met her Aunt Margaret, but this is a REALLY good chicken salad. If you don't like curry, you can omit it, but I think that's what makes it so special.
