Baked 9" pastry shell
1 quart fresh strawberries
Strawberry Glaze
Whipped cream, sweetened


1 pint washed and hulled fresh berries
1/2 cup water
1 cup sugar
2 1/2 tbsp. cornstarch
1 tbsp. butter
Red food coloring

Prepare pastry for one crust pie. Bake. Cool completely. Wash, drain ane hull fresh strawberries. Place berries in cooled pie shell.
Crush berries well, combine with water and cook about 5 minutes. Strain and place liquid back into pan. Mix sugar and cornstarch together, add to strained berries in pan. Bring to a boil and cook until mixture is clear and thickened. Add butter and enough food coloring for an attractive red color. Cool slightly, then spoon glaze over all the berries, making that all berries are covered. Cool, then refrigerate. Just before serving spread sweetened whipped cream over top.
