2 Cups of All-Purpose Flour
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 Cup Butter
1 Egg (Separated)
3 Tbsp Honey
1/3 Cup Buttermilk
1/2 tsp salt
1 Cup Cinnamon Chips
1 tsp sugar
1/4 tsp Cinnamon

Glaze:
2 Tbsp Milk
1 Cup Powdered Sugar
1/4 tsp Cinnamon
1/4 tsp Vanilla

Directions:

1. Preheat oven to 400º
2. Combine Flour, Baking Soda, Baking Powder, and Salt
3. Cut in Cold Butter
4. Separate Egg and combine Egg yolk, Honey, and Buttermilk (Beat well)
5. Add Cinnamon Chips to dry ingredients, then add milk mixture to dry mixture.
6. Gently knead dough on floured surface (Careful to not over work the dough)
7. Form dough into a ball, and then pat into a circle about 1 inch thick
8. Cut circle as you would a pie or a pizza
9. Place scones on cookie sheet lined with parchment paper and brush egg wash (from the egg white) onto the scones, then sprinkle the 1/4 tsp Cinnamon and 1 tsp Sugar on top
10. Bake 10-15 minutes
11. Once scones have cooled, combine the glaze ingredients and drizzle

I recommend freezing the butter and then grating with a cheese grater. It makes the butter much easier to cut in and it creates little buttery pockets in the scones.
