1 egg
11 egg yolks
1 3/4 c. sugar
1/2 t. salt
1/2 t. crème of tarter
2 t. baking powder
2. c. flour
1/2 t. lemon extract
1/2 t. orange extract
juice of 1 lemon
2 t. lemon zest
lemon juice, extracts and water to make 1/2 c.

Heat oven to 325º. Have all ingredients at room temperature. Sift flour, salt, crème of tarter and baking powder together twice. Put lemon juice, extracts in measuring cup and add cold water to make 1/2 c. Beat the egg and egg yolks at speed 7 for 6 min. Add sugar during the last 3 minuets. Add the lemon zest and mix to just incorporate. Alternately add dry ingredients and liquids in thirds. Mix one minuet after each addition. Pour into a 10" ungreased tube pan. Bake 60 min until tester is clean. Invert to cool completely prior to removing from the pan.
