1 lb. yellow summer squash, chopped
1/4 c. water
1/4 c. chopped onion
1/2 tsp. salt
1 egg, beaten
1/4 c. dry bread crumbs
2 T. butter, melted
1/2 c. shredded cheddar cheese

Directions:
Directions:
In a saucepan, combine the squash, water, onion and salt. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until squash is tender. Remove from the heat.

Stir in the egg, bread crumbs, butter and pepper. Transfer to a greased 1 qt. baking dish; sprinkle with cheese. Bake, uncovered, at 350º for 30 minutes or until heated through and the cheese is melted.
