2- 15 oz. cans fat free chicken broth
1 can cream style corn
2 cups frozen or canned corn
2 plum tomatoes, diced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, chopped
1/2 cup LF milk
1 tablespoon canned chipotle peppers in adobe sauce
1 teaspoon minced garlic
1/4 teaspoon cumin
3/4 cup instant mashed potaotes flakes
1/4 cup sour cream
Optional: salt, pepper, cilantro

Directions:
Directions:
Place all ingredients except the potato flakes, optional ingredients and sour cream in a crock pot. Mix well. Cover and cook on high for 3-4 hours or on low for 6-7 hours.

About 1/2 hour before serving, add potato flakes, sour cream and optional ingredients.

Garnish with fresh cilantro.
