1 lb. boneless beef sirloin
2 TBSP. vegetable oil
2 cups sweet pepper strips
1 med. onion cut into wedges
1/4 tsp. garlic powder
1 can cream of mushroom soup
1 TBSP. soy sauce
1/2 tsp. ground ginger
4 cups cooked rice

Directions:
Directions:
Slice beef across the grain into thin strips. In skillet stir beef in 1 TBSP oil ( may have to do two batches) remove from skillet. Stir fry the peppers and onions with garlic in remaining oil in same skillet until tender crisp. Stir in soup, soy sauce, and ginger. Heat to boiling, add beef back to skillet, heat through. Serve over cooked rice.
