1-1/2 C. quick cooking rolled oats
1/2 C. flaked coconut
1/2 C. chopped walnuts
1/2 C. flour
3/4 C. packed brown sugar
1/2 C. butter
2 tbsp. honey
red or green candied cherries cut in half

Directions:
Directions:
In a large bowl, stir together rolled oats, flaked coconut, walnuts and flour - set aside. In a saucepan, combine brown sugar, butter and honey. Slowly bring mixture to a boil, stirring frequently to avoid burning. Pour the hot mixture over the oat mixture and hand mix until everything is moist. Press mixture into lightly greased mini cupcake/muffin pan and top each one with a 1/2 of cherry. Bake at 350º until well browned, 15-20 minutes. Cool in pan for 10 minutes, then remove to rack to cool thoroughly.
