Ingredients:  
Ingredients:  
1 lb. Round Steak, fat trimmed
1/4 cup soy sauce
1 clove garlic
1/2 tsp grated ginger
1/4 cup oil
1 cup green pepper, cut into 1-inch squares
1 cup green onion, thinly sliced (or yellow onion)
2 stalks celery, sliced
1 T cornstarch
1 cup water

Directions:
Directions:
Cut beef into thin strips. Combine soy sauce, garlic and ginger. Add beef, toss and set aside.
Heat oil in large frying pan. Add beef and toss over high heat until brown. Cover and simmer for 40 minutes over low heat until tender. Turn up heat and add veggies, toss for 10 minutes.
Mix cornstarch with water. Add to pan, stir until thick. Add tomatoes (optional) and heat through.
Serve over rice.
