Spicy Chicken with Peanuts Recipe

1/4 cup chicken broth
1 tbsp cornstarch
1 tbsp sugar
2 tbsp soy sauce
1 tbsp white vinegar
1/4 tsp cayenne
1 tbsp vegetable oil
1# chicken, cut in small pieces
1 clove garlic
1 tsp grated ginger root
1 medium red pepper
1/3 cup dry roasted peanuts
2 green onions, sliced

1) mix broth, cornstarch, sugar, soy sauce, vinegar and cayenne pepper
2) fry chicken in oil, adding garlic and ginger root when almost done
3) add bell pepper and fry for 1 minute
4) add cornstarch mixture and cook until sauce thickens (approximately 1 minute).

Stir in peanuts and garnish with onions
