1 cup butter
2 cups brown sugar
3 cups or more of mashed bananas
4 eggs
2 tsp vanilla
2 1/2 cups all purpose flour
2 tsp baking soda
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 cup chopped walnuts

Directions:

Preheat oven to 350
Cream together butter and sugar until light and fluffy. Add mashed bananas and eggs one at a time beating after each addition. Add vanilla.
Mix all dry ingredients together and blend gradually with the banana mixture. Once blended pour into two greased loaf pans and bake for 55 minutes to 1 hour. If a toothpick inserted in the middle comes out clean it is done! Cool on a wire rack completely.

I slice up the cooled loaves and individually wrap each one in saran wrap and then into a large freezer bag. This is a quick way to grab a slice for lunches or deliver to your children who have moved away - right Alli, Carlin, Tiana and Kayla??
