2 lbs. russet potatoes, peeled and cut into 1/8" thick slices
1 1/2 c. heavy cream
2 cloves garlic, chopped
1/2 tsp. ground nutmeg (preferably fresh)
1-2 T. butter
1/2 c. parmesan cheese, grated, plus more for broiling
2 sprigs fresh thyme, plus more for garnish
salt and pepper to taste

Preheat oven to 375.

In a saucepan, heat the cream with a sprig of thyme, garlic and nutmeg.

While cream is heating, grease a casserole dish. Place a layer of potatoes in an overlapping pattern and season with salt and pepper. Remove cream from heat and pour a little over the potatoes to coat. Top with some grated parmesan. Repeat for 2 more layers.

Bake, uncovered, for 45 minutes. Sprinkle more parmesan over the top and broil until the cheese browns (about 5 minutes). Serve.
