4 boneless, skinless chicken breast halves
1/4 c. flour
2 T. vegetable oil
4 c. mushrooms, sliced
3 T. Dijon mustard
1/2 c. dry white wine
2 T. fresh parsley, chopped

Directions:
Directions:
Rinse chicken; pat dry. Coat chicken with flour; shake off excess. Heat oil in large skillet on medium-high heat. Add chicken; cook 8-10 minutes on each side or until browned on both sides. Remove chicken from skillet, reserving drippings in skillet; cover chicken to keep warm.

Add mushrooms to dripping in skillet; cook and stir 2-3 minutes or until the mushrooms are tender. Stir in mustard and wine, return chicken to skillet.

Bring to a boil. Reduce heat to medium-low; cover. Simmer 7-10 minutes, or until chicken is cooked through (170ºF). Sprinkle with parsley.
