1 T. olive oil
1 lb. organic ground meat (beef or turkey)
1 c. onion, chopped
1 c. celery, chopped
2 c. carrots, chopped
2 c. cabbage, chopped
1 c. zucchini, chopped
1 c. spinach, chopped
1 can (28 oz.) crushed tomatoes
2 (32 oz.) boxes broth (beef, veggie or chicken)
2 (15 oz.) cans white kidney beans, drained
5 cloves garlic, minced
1 c. mushrooms, sliced (optional)
salt and pepper to taste
good palm full of Italian seasoning
parmesan cheese

Directions:
Directions:
Sauté onions, garlic, celery and carrots in olive oil.

Place in crockpot with meat, cabbage, zucchini, spinach, tomatoes, broth, white kidney beans, mushrooms (optional), salt and pepper and Italian seasoning. Add additional water if needed. Simmer on low for 6-8 hours.

Garnish with parmesan cheese.
