1 small onion, chopped (about 1 c.)
2 cloves garlic, minced
1 T. olive oil
1 jalapeno pepper, minced (wear gloves when handling)
1 (4 oz.) can chopped green chilies, drained
1 tsp. cumin
1/2 tsp. dried oregano
1/8 tsp. cayenne pepper
1/2 tsp. salt
1 1/2 c. chicken broth
2/3 c. cooked white kidney beans, rinsed and drained
8 oz. cooked chicken breast, cubed (about 2 c.)
1/4 c. fresh cilantro, chopped
1/2 c. jack cheese, shredded

Heat olive oil in a medium to large saucepan. Add onion and garlic and sauté until tender. Add jalapeno, chilies, cumin, oregano, cayenne pepper and salt. Sauté for another minute. Stir in chicken broth, kidney beans and chicken. Bring to a boil. Cover and simmer for 25 minutes. Stir in cilantro and serve.
