Jack Daniels Grill Sauce Recipe

One head garlic
1 tablespoon olive oil
2/3 cup water
1 cup pineapple juice
1/4 cup teriyaki sauce
1 tablespoon soy sauce
1 1/3 cup brown sugar
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon Jack Daniels whiskey
1 tablespoon crushed pineapple
1/4 teaspoon cayenne pepper

Cut 1/2 inch off the top of the garlic head. Cut bottom so garlic sits flat. Remove papery skin leaving enough to keep garlic bulb together. Put garlic in baking dish and drizzle with olive oil. Bake in a preheated 350 for one hour, covered.

Combine water, pineapple juice, teriyaki sauce and brown sugar in a medium pan. Cook over medium high heat stirring occasionally until mixture boils. Reduce heat and simmer.

Squeeze the sides of the garlic until the roasted garlic is squeezed out. Measure out 2 teaspoons into sauce pan and whisk to combine. Add the rest of the ingredients to the pan and stir.

Let mixture simmer for 40 to 50 minutes until sauce has been reduced by half and is thick and syrupy. (Do not let it boil over).

Makes approximately one cup
