3 - 4 cups sliced zucchini
1 cup sliced green peppers
1/2 cup chopped celery
1 cup sliced onion
1 tsp salt
1 can tomato soup
2 cups shredded mozzarella cheese

Directions:
Directions:
Layer the zucchini, green peppers, celery and onion in a casserole dish. Mix salt and tomato soup and pour over vegetables. Cover and bake at 375 F for about 45 minutes or until vegetables are tender. Remove from oven and sprinkle on the cheese. Bake until cheese is melted and lightly brown. Delicious served with rice or noodles.
