1 cup raisins
1 cup currants
1 cup apricots
1 cup prunes
1 cup diced fresh apples
other desired dry fruits
1/2 to 1 cup large tapioca

Directions:
Directions:
In a bowl, soak tapioca in 2 cups water overnight. In kettle or large bowl, soak fruits overnight (fresh fruit needs no soaking) in 3 or 4 cups water. When ready to cook, cover fruit with hot water, add 1 stick cinnamon and simmer until fruit and tapioca is cooked well. Add 1/2 tsp salt, a wee pinch of cloves, 3 tablespoons lemon juice and 1/2 to 1 cup sugar. Cook another 10 minutes. Serve hot or cold with cream or ice cream. Can be an appetizer or a dessert.
