1 cup sifted all-purpose flour
1 tbsp sugar
1 1/2 tsp baking powder
1/4 tsp salt
2 tbsp butter or margarine
1 egg
2 tbsp milk
1 - 3 oz pkg strawberry flavored gelatin
1/3 cup sugar
3 tbsp all-purpose flour
1 1/2 lbs rhubarb, sliced (5 cups)
2/3 cup sugar
1/3 cup sifted all-purpose flour
3 tbsp butter or margarine
vanilla ice cream

Directions:
Directions:
Combine the 1 cup flour, 1 tbsp sugar, baking powder and salt. Cut in the 2 tbsp butter or margarine till mixture resembles course crumbs. Beat egg with milk, add to the flour mixture. Stir till dry ingredients are moistened. Pat dough evenly on bottom and 1 inch up sides of 9 x 9 x 2 inch baking pan. Combine the gelatin, 1/3 cup sugar and 3 tbsp flour. Add to rhubarb and mix well, turn into crust lined pan. Combine the remaining sugar and flour, cut in the remaining butter till crumbly. Sprinkle evenly over rhubarb filling. Bake at 375º F for 45 minutes or till rhubarb is tender and topping is lightly browned. Cool completely. Cut into squares, top each with vanilla ice cream.
