1/2 cup salted butter
1 tbsp. finely minced fresh rosemary
1 tbsp. finely minced fresh thyme
2 tsp. finely minced fresh oregano (optional)
2 tbsp. chopped parsley
1 large clove garlic, pressed or minced
Large pinch of steak seasoning

Directions:
Directions:
Soften butter. Prepare fresh herbs and garlic as listed above. Using mortar and pestle, ground herbs, garlic and steak seasoning together until thoroughly mixed. Stop before reducing entire contents to paste. Mix in with butter. Once mixed, place butter in a storage container and refrigerate.

When using oregano, I will reduce the rosemary and thyme slightly. I also use homemade steak seasoning (recipe can be found in this chapter) but any steak seasoning will work.
