8 cups cooked and grated beets, reserving 1 cup of beet juice 2 cups horseradish 1/2 cup sugar 1/2 tsp salt 1 cup vinegar
Place all the above ingredients in a stainless steel bowl and mix well. Pack into jars and place into a hot water bath to seal jars. Note: If you are purchasing the horseradish make sure it is the one without cream in it.
