Ingredients: 15 C. Roma tomatoes diced ( Lazy man can use large tin from Costco) 1 Large Kelsey onion diced or 2 large sweet Spanish onions 2 Green bell peppers diced 2 Yellow bell peppers diced 3 Hungarian hot wax peppers diced (seeds included) 4 Mucho nacho peppers finely chopped or jalapeno peppers (seeds included) 1 big red chili pepper finely chopped 8 cloves garlic minced 2 stalks celery chopped Put 4-5 Tbsp. of olive oil in large pot; add onions and peppers; cook for 5 minutes on medium high heat stirring often. Add Roma tomatoes; mx well with onions and peppers Add: 1-14oz. can tomato sauce 1 13oz. can tomato paste 3 tbsp. red wine vinegar 1 C. chopped cilantro 1/2 C. fresh chopped parsley 1/2 C. fresh chopped oregano 1/4 C. fresh chopped basil Season with: 1 tsp. salt ! tbsp. seasoned salt fresh ground pepper
