1 lb.ground beef
3 large onions,sliced
1 large green pepper,chopped (or half red half yellow pepper)
1 (16oz)can diced tomatoes(do NOT drain)
1/2 cup.uncooked regular rice
2 tsp .Salt
1 to 2 tsp.Chili Powder
1/4 tsp. Pepper
Shredded Cheese

Directions:
Directions:
Heat oven to 350 degrees. In large skillet cook and stir meat,onions and green peppers until meat is brown and vegetables are tender. Drain off fat. Stir in tomatoes,rice,salt,chili powder and pepper. Heat through. Pour into ungreased 2 quart casserole. Cover with foil(or lid)and bake 1 hour.
Last 10 Min of baking add about a cup or so of shredded cheese to the top, leave cover off.

I usually cook meat separate, drain then add cooked onions and peppers to meat. Sometimes the rice at the bottom of pan does not cook well you can always take out half way and mix if you are having this problem.
