2 zucchinis or yellow squash, washed and sliced
2 red or yellow peppers, sliced
2 diced tomatoes
1 or more garlic cloves, smashed (optional)
Olive oil
Basil (optional)
Salt and pepper to taste
Grated parmesan cheese

Directions:

Toss all ingredients on a sheet of aluminum foil.

Form a packet.

Grill over high heat, 10 minutes, or bake at 400 ◦ for 10 – 20 minutes. Top with grated Parmesan cheese if desired.
