2-3 T oil
1 c. diced bell pepper diced
1 c. onion diced
1 t. garlic minced
1 c. rice
1/4 c. cilantro
8oz can of tomato paste
14.5 oz can of diced tomato
1/4 cup of cumin
3 cups of water minimum
1 can of corn (optional)

Directions:
Directions:
pour oil in pan and heat on med high
sauté bell peppers, onions and garlic for about 3 mins then add rice. cook rice till slightly brown then add cilantro and cumin. stir in tomato paste and diced tomato's. add water slowly. add corn if wanted. on med/low hit simmer for about 10 mins until water evaporates. Remove lid and stir to fluff.
