Sweet Red Pepper Relish
4 c. minced red bell peppers* (not the hot kind)
1/2 c. minced red onion
1-3/4 c. sugar
1-1/4 c. white vinegar
2 tsp. marjoram
1/4 tsp. hot red pepper
1 tbsp. corn syrup
* about 4 medium peppers

Directions:
Directions:
Place all relish ingredients in sauce pan. Bring to simmer. Reduce liquid by half. Refrigerate.
To build sub sandwich, layer thin slices of a good Capicola, Provolone cheese and red onion on a sub roll and spread with Red Pepper Relish and mayonnaise. Add lettuce and enjoy!
