1 lb. (or a little more) boneless, skinless chicken breast
1 pkg. (approx. 9 oz.) 3-cheese tortellini (or flavor of your choice)
1-14.5 oz. can diced tomatoes with basil, garlic. and oregano
1 Tbsp. (or less) minced garlic
16 oz. (approx.) fresh baby spinach

Fill pasta pot with hot water, bring to a boil. Cut chicken breasts into 1"x2" strips. (I prefer to cut into smaller pieces so they are bite size.) Add tortellini to boiling water, cook according to package directions. Meanwhile, pour tomatoes into a large skillet (13 inch skillet works well so all of the uncooked spinach fits in). Add chicken strips and garlic. Cook covered until chicken is fully cooked. Add spinach, cover for 3 minutes. Stir and cover skillet until spinach is wilted. Add drained tortellini to the skillet. Serve. (We like to add some parmesan cheese over it when served.)
