1 lb. package turkey
1/4 Cup Egg Beaters
1/3 Cup dry unseasoned bread crumbs
1 10 oz. can Ro-Tel tomatoes (reserve 1/4 cup liquid)
2 Tbsp. 30% less sodium dry taco mix
1/4 Cup shredded Mexican Cheese

Directions:

Preheat Oven 400
Spray cupcake tray with cooking spray
Mix turkey, eggbeaters, drained tomatoes, plus 1/4 reserved liquid and taco seasoning in medium bowl. Form 12 balls and top with cheese. Bake 18-20 minutes.

Calories 70 per ball.
