1 c Yellow Cornmeal
1/2 c All Purpose Flour
1 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 c Red Cayenne Pepper

Directions:

Mix all the ingredients. Store in airtight container. Dip fish in milk then in batter. Fry in hot oil til golden brown.

When I spoke with Mrs. Russell and Mrs. Hixson they both said they didn't have a clue on the fish batter. Mrs. Hixson said to call Mr. Charles Lowery. He would be the one to come close to remembering. I spoke with him and explained we were doing our Family cookbook and wanted to include the Fish batter, Onion Rings, and Hushpuppies. He told me this is about as close as he could come to a basic recipe, but that at the end they just bought commercial size bags of Zataran's Fish Fry. It was easier and tasted as good as what they use to mix up. So if you are doing large group amounts you can get commercial size bags or if it for just a few buy the one in the store.
