Zucchini Cake Recipe

3 eggs
1 cup Vegetable oil
2 cups grated raw zucchini
2 cups all purpose flour
1 teas salt
2 teas. baking soda
1/4 teas baking powder
1 teas vanilla
1 teas. cinnamon

one cup of raisins or one cup chopped nuts are optional

Preheat oven 350
Beat together eggs, oil, vanilla and sugar. Add flour, salt, soda, and baking powder.
Pour batter into 9x13 inch greased and floured cake pan.
Bake for one hour or until toothpick comes out clean.
When cooled frost with cream cheese frosting.
