1 whole Chicken cut up
1 sm Onion chopped
1-2 stalks Celery
Salt & Pepper to taste
1 -2 Chicken Bouillon cubes

Directions:
Directions:
Place cut up chicken in stock pot with chopped onion and celery. Cover with water. bring to a slow simmer. Add bouillon, salt and pepper. Simmer until chicken is done. Remove chicken to plate to cool. Debone chicken.

Measure chicken stock: 2 cups of stock for every 1 cup of raw parboiled rice. Bring broth to boil add rice, cover, reduce heat, Simmer 20-25 minutes or until liquid is absorbed. Add 1-2 Tbsp of butter and deboned chicken. Note: 1 cup raw rice is equal to approximately 2 cups when cooked.
