1 cup flour
1/4 cup sugar
4 tsp. baking powder
3/4 tsp. salt
1 cup yellow cornmeal
2 eggs
1 cup milk
1/4 cup shortening

Directions:
Directions:
Mix flour, sugar, baking powder and salt. Stir in cornmeal. Add eggs, milk, and shortening. Beat with a mixer just until smooth. Do not overbeat. Pour into greased 9x9x2 pan. Bake at 425 for 20-25 minutes. Can also be baked in muffin pans for individual corn muffins. Fill muffin tins about 2/3 full and bake at 425 for 12-15 minutes.
