2 tbsp. oil
2 bacon slices
3 carrots (peeled and diced)
3 celery stalks (diced)
1/2 yellow onion (diced)
2 1/2 c. chicken broth
1 1/2 c. water
1 can green chili
1 can diced tomatoes
1 can corn
1 can black beans
1 bay leaf
1/2 tsp. cumin
1/4 tsp. chili powder
1 tsp. salt
1/2 tsp. pepper

Directions:
In a large pot, cook bacon until crispy. Add oil, onion, carrots, and celery. Sauté over medium heat about 4 minutes. Add the rest of the ingredients and bring to a boil. Reduce heat to a simmer and cook for 30 minutes
