4 large baking potatoes short and fat
Butter
Green onion chopped
Salt and pepper to taste
Cheese such as cheddar
Cream
Egg yoke
Paprika


Directions:
Directions:
Wash potatoes, coat with a little oil and bake in the oven at 400º for about 1 hour or until knife inserted easily.
Cut off 1/3 top of the potato. Scoop out the potato leaving a shell. Also scoop out the top and then place the top skin back inside the potato shell.
Mix the potato with butter, green onion, cheese, cream, egg yoke and salt and pepper.
Add the potato back in the potato shells evenly. With your fork ruff up the potato and add melted butter and sprinkle with paprika. Bake in 400º over for 20 minutes or until lightly browned.
