1 c Vegetable Oil
1 1/2 c Brown Sugar
4 Eggs
3 c All Purpose Flour, divided
1 tsp Baking Powder
2 tsp Salt
2 tsp Cinnamon, Allspice,
1 tsp Cloves
1/4 c Brandy
3/4 c Orange Juice
1 1/2 c Candied Red & Green Cherries
1 c Candied Pineapple
1 c Raisins
1 c Dried Dates
1 c Candied Mixed Fruit
3 c chopped Pecans

Directions:
Directions:
Combine oil, brown sugar, and eggs. Beat for 2 minutes. Sift together 2 cups flour, baking powder, salt and cinnamon, allspice and cloves. Add to egg mixture alternately with the Brandy and Orange juice. Mix all fruits and chopped nuts with extra cup of flour. Stirring to coat fruit. Pour batter over fruit and mix thoroughly. Line pans with brown paper add batter.
Bake 2-1/2 - 3 hours at 275º. Let stand 15 minutes before you turn out. Put a pie pan of water under cake when baking. Store in Brandy or Whisky soaked cheese cloth. If you store them for any amount of time add additional liquor each week.
