225g self raising flour
100g apple sauce
100g grated cheese
175ml milk
1 egg
55ml olive oil
12 cherry tomatoes
pepper & salt to taste.

Preheat oven to 200c
In a mixing machine combine the flour, apple sauce, salt, pepper and cheese. Mix well.
In a separate bowl mix the milk, egg and olive oil. Add this to the dry ingredients and mix well.
Grease a twelve muffin mould and half fill with the mixture. Prick each cherry tomato (this stops them from bursting when cooking) and push into the top of each muffin. Spoon remaining mixture over each muffin to conceal the tomato. Cook for about 20 minutes until golden brown.
