12 oz. chocolate chips
2 T. butter
1/2 c. egg beaters
2 tsp. vanilla
2 c. powdered sugar
1 c. walnuts - chopped
10 oz. pkg. miniature marshmallows

Directions:
Directions:
Melt chocolate chips and butter in microwave. Beat in egg beaters and vanilla. Add powdered sugar. Beat. By hand mix in walnuts and marshmallows.
On a piece of wax paper about 12" long, sprinkle some coconut.
Put half of the chocolate mixture on top of coconut to form a log. Sprinkle a little more coconut over the log and roll the log until it is covered with the coconut.
Move the log to a clean piece of plastic wrap and cover tightly.
Repeat with the second roll.

You can make smaller rolls if you desire.
I usually double wrap the rolls and keep in refrigerator up to a month.
