Pie Filling


Ingredients:

1 baked pie crust and cooled

¼ c. cocoa

1 c. sugar

¼ c. cornstarch

½ tsp. salt

3 egg yolks, beaten

2 c. milk

2 tbsp. butter

1 tsp. vanilla


Directions:
Directions:
In sauce pan combine cocoa, sugar, cornstarch and salt; blend well. Combine milk and egg yolks and gradually stir into sugar mixture. Cook over medium heat, stirring constantly until mixture thickens and come to a boil. Boil and stir for 1 minute. Remove from heat and blend butter and vanilla. Pour into baked cool pie crust.
 

Meringue


Ingredients:

3 egg whites

4 tbsp. sugar

¼ c. cream of tartar

½ tsp. vanilla

Directions:
Directions:
Blend egg whites with cream of tartar. Beat until frothy or soft peaks. Gradually beat in sugar, a little at a time. Continue beating until stiff and glossy. Pour meringue onto pie filling, being careful to seal the meringue onto edge of crust to prevent shrinking.

Bake pie at 400º for 8 to 10 minutes.
