1 cup flour
tsp salt
pinch white pepper
pinch ground nutmeg
3 eggs
1 cups milk
2 tsp melted butter
butter for cooking crepes

Directions:
Directions:
1. Sift flour, salt, pepper & nutmeg
2. Make well in centre
3. Lightly beat eggs & milk & pour into well
4. Stir gradually until batter smooth
5. Add butter
6. Cover & rest for 1 hour
7. Grease crepe pan
8. When sizzling, add 1 ladle of batter and swirl around pan to coat evenly and thinly
9. When golden turn over quickly & carefully
10. Stack crepes between wax paper
11. Refidgerate or freeze for later use.
