Ingredients: 1 cup Buckwheat honey
½ cup butter or margarine at room temperature ¾ cup brown sugar
4 eggs separated set egg whites aside and keep cold
3 cups unbleached all purpose flour 2 tsp baking soda ½ tsp baking powder ½ tsp salt 1 heaping tsp cinnamon 1 cup light or regular sour cream

Directions:1. Bring honey to a boil; be careful as it boils over very quickly; as soon as it reaches a boil remove from heat and cool to room temperature 2. Cream butter and sugar 3. Beat in egg yolks one at a time 4. Beat in honey 5. Combine dry ingredients in separate bowl; mix well together 6. Alternately add flour mixture and sour cream to honey mixture 7. Beat egg whites until stiff. Fold into batter 8. Spray 2 loaf pans or 1 10” tube pan with cooking oil spray or grease pan well 9. Bake 325F for 45 min for tube pan or Bake 325F for 40 min for loaf pans 10. Test with toothpick, if not cooked through, reduce heat to 300F and bake 5 min more; if still not done; add another 5 min (you need to reduce the heat because the honey causes the cake to burn if the temperature is too high) 11. Cool 10-15 minutes then remove from pan(s) to cool on rack |
