Texas Style Stuffed Sweet Potatoes Recipe

3 pounds sweet potatoes

3 tablespoons butter

1/2 cup sour cream

1 teaspoon salt

2 tablespoons chipotle peppers in adobe, minced

3 green onions, chopped

1/2 cup grated cheddar cheese

3 strips bacon, fried and coarsely crumbled

Directions:
Directions:
1. Boil the potatoes until slightly soft, the amount of time will depend upon the size of the potatoes. When tender, remove from boiling water and chill.

2. Cut the potatoes in half and scoop out as much of the inner potatoes as possible, while leaving enough in the skin for the skins to hold together.

3. In a small saucepan, warm the butter, sour cream, salt and pepper.

4. Combine the chipotle peppers with the potatoes; add the scallions, reserving a bit for garnish. Mix well and then stuff the mixture back into the potato skins. Top each with the grated cheddar and pieces of bacon and bake in oven at 325º F., until heated through, about 8 to 10 minutes. Garnish with remaining chopped onions and serve.
