lettuce leaves
4 pounds chicken breasts, boned and cooked (allowing ⅓ pound per serving)
1 can Cranberry sauce, diced
a few raisins
1 pint or more strawberries, sliced
1½ large cans mandarin oranges (or 1 large & 1 small)
2 bananas, sliced
2 cups mayonnaise
⅛ to ¼ teaspoon curry powder (to taste)
½ cup crushed peanuts
2 cups orange yogurt

Directions:
Directions:
On each salad plate, arrange cooked chicken breasts ( which have been shredded, cubed or left whole--what ever looks good to you) on lettuce leaf. Over this, place in layers; diced cranberry sauce, raisins, sliced strawberries, mandarin oranges and bananas.
For dressing, combine orange yogurt, mayonnaise and curry powder.
Sprinkle crushed peanuts on top.
